Ingredients:

  • 1 κιλό Côte de bœuf σε θερμοκρασία δωματίου
  • 2 μικρά ματσάκια θυμάρι δεμένα με σπάγγο
  • Αλάτι & πιπέρι
  • 100γρ. αλατισμένο βούτυρο
  • Λίγο ελαιόλαδο

Execution:

  • Preheat the oven on the grill setting and heat an ovenproof dish.
  • Brush the dish with butter and a little olive oil. Pat the meat dry and place it in the dish along with 1 bunch of thyme.
  • Place the dish in the preheated oven and leave it for 3–5 minutes without moving it, allowing a dark crust to form on the outside.
  • Turn the meat and cook the other side for 3–5 minutes.
  • Remove the dish from the oven. Lightly smoke the second bunch of thyme by holding it over the stove flame until it starts to burn, then place it in the dish with the meat.
  • Partially cover the dish and leave it for a few minutes to allow the aroma to infuse.
  • Return the dish to the oven and cook for about 10 minutes (for medium-rare).
  • Remove the dish from the oven and leave the meat covered. Traditionally, the Côte de bœuf is sliced at the table when served.
