Oven Baking / Method 1
Heat a pan over high heat and sear the meat for 3–4 minutes on each side.
Continue cooking in a preheated oven at 220°C (428°F), placing the meat covered with parchment paper.
Estimate approximately 1 hour of baking per kilogram of meat.
During the last 20–30 minutes, uncover the meat to allow it to develop color.
Oven Baking / Method 2
Preheat the oven using the grill function at maximum temperature and sear the fillet for 15–20 minutes on each side (sear the two large sides).
Then, turn off the oven and leave the meat to cook for 2 hours without opening the oven, allowing it to retain the temperature it has reached.
