Roast Goat or Lamb with Thyme and Roasted Cherry Tomatoes
Ingredients:
3 κιλά κατσίκι ή αρνί (καρέ)
5 κ.σ. ελαιόλαδο
3 κ.σ. φρέσκο θυμάρι (τα φύλλα) ή 1 κ.σ. ξερό
Αλάτι και φρεσκοτριμμένοπιπέρι
500 γρ. ντοματίνια
Execution:
Preheat the oven to 180°C (356°F).
Rub the meat with 1 tablespoon of oil and sprinkle with 1½ tsp thyme, salt, and pepper.
In a bowl, mix the cherry tomatoes with the remaining thyme and oil, and season with salt and pepper.
Place the meat and cherry tomatoes in a baking dish and roast in the oven for approximately 2 hours.
Let the meat rest, covered with aluminum foil, for 10 minutes before slicing.
Serve with roasted vegetables.
Tip:
Αν βρούμε ντοματίνια μαζί με το τσαμπί τους, τα βάζουμε να ψηθούν χωρίς να αφαιρέσουμε το τσαμπί, για ένα πιο εντυπωσιακό αποτέλεσμα.
